African Peanut Stew

Ingredients:

1 tbsp coconut oil

1 tbsp minced garlic

1 inch minced fresh ginger

1-2 tsp crushed red pepper

1 tsp ground cumin

1 yellow onion

1 cup dried red lentils

2 large sweet potatoes, peeled, cut into 1-1 1/2 inch cubes

1 large bunch collard greens, hard stems removed, cut into 1-1 1/2 inch pieces

9 oz tomato paste

1 1/2 cups natural peanut butter

6 cups vegetable broth

salt to taste

Instructions:

In a large pan on high heat, heat coconut oil, garlic, ginger and onion until onion softens. Add lentils, cumin and crushed red pepper and stir until lentils are lightly toasted. Add tomato paste and peanut butter, reduce heat to med/high, stir, add remaining ingredients. Cook until sweet potatoes are soft, red lentils are fully cooked, and stew is thickened.
