Caribbean Peas and Rice

Ingredients:
2 cans coconut milk with
equivalent volume of white rice and water
1 yellow onion, diced
1 can kidney beans or pigeon peas, drained and rinsed
1 loosely packed cup of fresh spinach, torn
1/4 tsp allspice
1/4 tsp thyme
1/2 tsp chili paste
1 tsp minced garlic
Dash of salt

Combine all ingredients in rice cooker or instant pot and cook on “brown rice” setting or for about 45 minutes.
