Brussels sprouts salad
For the salad:
1 1/2# brussels sprouts, uncooked, chopped in food processor
4 carrots, uncooked, chopped in food processor
1 c raisins
1/2 c dried apricots, chopped
1/2 c pecans in pieces
1/2 c sunflower seeds
For the dressing:
zest and juice of 2 oranges and 2 lemons
1 yellow onion, chopped
1 tsp cinnamon
dash of clove
dash of allspice
2 tbsp apple cider vinegar
1/2 cup pecans
splash of olive oil
salt and pepper to taste
Combine all dressing ingredients in blender (I love my immersion blender for this)
Toss with all salad ingredients. Serve cold.
