Picante adobo rice and beans

Ingredients:

2 cups short grain brown rice

2 cups tomato sauce

one diced onion

one cup pinto beans (cooked/rinsed)

one 7 oz can Herdez brand chipotle peppers in adobo sauce (use all of the sauce and as few or as many peppers as you like for desired heat. I usually use no more than half of the peppers in the can)

2 cups water

Stir all ingredients in rice cooker or instant pot. Cook until rice is done and nearly all liquid is absorbed. Goes wonderfully with Fajita Style Stuffed Peppers.
