Red potato salad
Seriously kick ass potato salad!
The salad:
5 pounds small red potatoes, cut in quarters then boiled until just softened, drained and allowed to cool
1 bunch green onions, finely chopped
1-2 cups chopped celery
One jar of Bubbies pickles (no sugar!), finely chopped
The dressing:
1 pound of silken tofu
2-3 tablespoons brown mustard
1 tablespoon dried dill
salt and pepper to taste (don't be stingy with the black pepper)
Directions:
Blend all dressing ingredients (I love the immersion blender for this) and pour/stir to coat combined salad ingredients. Serve chilled.
