Cajun dirty rice and southern pan fried cabbage

Delicious together or separate.

For the dirty rice:

2 bell peppers, diced small

2 yellow onions, diced small

1 cup celery, diced small

2 cups frozen black eyed peas

2 tbsp minced garlic

1-2 tbsp Old Bay seasoning

1 tbsp Oregano

2 cups Vegetable broth

1 Bay leaf

Salt to taste

Short grain brown rice, about 6 cups, best if cooked the day before and chilled overnight

1-2 tbsp cooking oil

Heat the oil in a large pan. Saute onions, peppers and celery until fragrant and softening. Add garlic, old bay, oregano, salt, black eyed peas, and vegetable broth. Simmer for about 15 minutes. Add rice, stir, serve warm.

For the cabbage:

1 head of cabbage, in 1 inch chunks

2-3 tbsp cooking oil

3 onions, in 1 inch chunks

2 tbsp minced garlic

1 tbsp thyme

1 tsp smoked paprika

1 tsp garlic powder

Crushed red pepper flakes and salt to taste

Heat oil in a large pan, then add onion and cook until beginning to caramelize. Add garlic, thyme, red pepper and salt. Stir well, add cabbage and cook on medium high heat, stirring occasionally, allowing cabbage to sear in the pan. Add garlic powder and smoked paprika as cabbage begins to soften and adds liquid to the pan. Serve when cabbage is medium soft, serve hot.
