Three sisters mash
2 tbsp walnut oil
1 onion, diced
3 zucchini or summer squash, cut in 1 inch pieces
2 cups sweet corn kernels, thawed or rinsed and drained
2 cups mixed beans (pinto, kidney, pigeon) and 2 cups hominy, drained and rinsed.
3-4 cups apple cider
Maple flavor (no sugar/vegan; I like Frontier co-op brand)
Wright’s liquid smoke
In a large sauce pan, combine beans and hominy. Cover in apple cider, and add 1/2 tsp maple flavor and a small splash of liquid smoke. Simmer until it begins to thicken.
In a large pan, heat walnut oil and cook onion on medium high heat until it starts to brown.
Add corn kernels, chopped sage and squash, and sautée/sear on medium high heat, stirring often, until edges are crisp and squash is lightly cooked but still firm
Add beans and hominy.
Stir, serve warm.
