Red cabbage and apples
1 large head of red cabbage, cut into 1-1.5 inch chunks
1 yellow onion
4 granny smith apples, cut into 1 inch chunks
2 cups apple cider
2 tbsp apple cider vinegar
1 tbsp coconut oil
1 tsp caraway seeds
1 tsp minced garlic
salt and pepper to taste
In a large skillet, heat oil and onion until onion is transparent. Add caraway, garlic, salt and pepper and stir until aromatic. Add cabbage, stir to mix/coat, then add cider and apples. Cook until cabbage is softened. Add vinegar and serve warm.
