Pra Ram Tofu and vegetables (simple Thai peanut sauce)
In a large pan over medium high heat, combine the following:
8 oz fresh spinach leaves , roughly chopped
1 shredded carrot
1 cup snow peas, cut into 1/2 in pieces
2 14 oz packages super firm tofu
1-2 tbsp peanut oil
1-2 tbsp liquid aminos
Once spinach is wilted, carrots and peas are softening and tofu is hot, add sauce mixture
For the Sauce: Whisk together all ingredients and pour over tofu/vegetable mixture. Heat and serve over jasmine rice
1 16 oz jar natural creamy peanut butter, no added sugar
1/4 tsp pure maple flavor
1/2 cup rice vinegar
2 tbsp fresh cilantro , finely chopped
3 cloves garlic , minced
1/2 cup liquid aminos
1 tbsp red chili paste
2 tbsp peanut oil
1/2 to 1 cup warm water
