Samosa Pie
Preheat oven to 375
Thaw two Wholly gluten free pie crust (contains cane sugar)
Filling ingredients:
3 large russet potatoes, baked and cooled, coarsely mashed and scooped from skin (I diced one half with skin on)
1 cup frozen riced cauliflower
1 cup frozen green peas
1 yellow onion
1 tbsp coconut oil
2 tbsp minced garlic
1 tsp garam masala
1/2 tsp groung cardamom
1 tsp ground ginger
1 tbsp garlic chili paste (to taste)
salt and pepper to taste
In a large pan, saute diced onion in coconut oil until soft
Add garlic and spices, saute to aromatize spices
Add potatoes, peas and cauliflower
Stir well and heat mixture thoroughly
Spoon mixture into one pie crust and top with the other pie crust
Bake for 30-40 minutes, uncovered
