German style red cabbage and apples

1 tbsp unrefined coconut oil

2 onions, diced

4 apples, chopped into approx 1# pieces

1 red cabbage, chopped

1 tsp caraway

1 tbsp garlic

1/2 tsp allspice

6 cups fresh apple cider

1/4-1/2 cup apple cider vinegar

In a large pan, saute onion in coconut oil until translucent over medium high heat. Add garlic, caraway and allspice and saute until fragrant. Add cabbage and stir to coat. Add apple cider and simmer over medium heat, stirring occasionally until cabbage starts to become tender. Add apples and simmer until cabbage is soft. Add vinegar. Serve warm.
