Black bean loaf with home made ketchup

For the ketchup:

1 16 oz can diced tomatoes, drained and rinsed

3 cloves roasted garlic

3 oz tomato paste

1 tsp onion flakes

3 tbsp apple cider vinegar

dash cinnamon

dash allspice

1 tsp dijon mustard

salt and pepper

blend all ingredients with immersion blender and heat on stove top to thicken slightly.

For the black bean loaf:

4 cans black beans, rinsed and drained

3 cups quick oats

1 tbsp olive oil

1 red bell pepper, chopped

1 carrot, chopped

2 tbsp onion flakes

1 tbsp minced garlic

1/4 cup liquid aminos

1-2 tbsp teaspoon cumin

1/4 cup nutritional yeast

2 tbsp porcini mushroom powder

2 tbsp ketchup plus some to top

salt and pepper, to taste

Saute pepper, onion, carrot and garlic in olive oil over high heat until tender.

Combine all ingredients in a large mixing bowl. Using good sanitary technique, hand mix until well combined but not completely smooth.

Place mixture into 2 greased loaf pans

Bake 350 until it has a nice crust on top, about 35-40 minutes
