Mboko: Mashed plantains in coconut milk (Kenyan)
So easy to make, and disappears in a hurry! Serves warm or cold, like a pudding.
4-6 ripe plantains.
2 16 oz cans coconut milk
dash of cinnamon
dash of allspice
Cut ends off plantains, and cut each plantain into 3 segments. Cut each segment in half lengthwise and remove peel.
Place plantains in a large sauce pan. Cover with coconut milk, and boil until soft, about 15-20 minutes.
Add cinnamon and allspice, and mash with a potato masher until creamy. Refrigerate.
