Wild rice salad with kale and apples

Cook 2 cups wild rice, 6 cups water and 1 cup dried cranberries in rice cooker. Allow to cool.

Add remaining salad ingredients:

2 honeycrisp apples, diced

1/2 c walnut pieces

1/4 cup hulled sunflower seeds

8-10 green onions, diced

1 cup chopped kale

Combine for the dressing:

2 oranges, juice and zest

1 lemon, juice and zest

juice of 1 lime

1” ginger, grated

a splash apple cider vinegar

2-3 tbsp walnut oil

salt and pepper to taste

Stir and serve chilled.
