Turmeric roasted cauliflower with raisins
2 heads of cauliflower, cut into florets
2 tbsp walnut oil
1” ginger, grated
2 pieces turmeric, grated
1 tsp cinnamon
dash allspice
dash cayenne
juice of 2 oranges, 1 tsp orange zest
salt to taste
1 cup golden raisins
Combine all ingredients except cauliflower and raisins and mix well with a whisk. Adjust seasonings to taste.
Set aside 1/4 cup of juice mixture.
Toss cauliflower florets in remaining mixture. Spread on a baking sheet and roast in oven at 400 degrees for about 20-30 minutes.
Saute raisins in the 1/4 cup of juice mixture for a few minutes to soften the raisins and blend flavors
When cauliflower is roasted, transfer to a large bowl, add raisins, stir and serve hot
