Savory cabbage soup

2 onions in large chunks

6 carrots 1” chunks

2 stalks celery chopped

4-5 red potatoes in chunks

1 head of cabbage coarsely chopped

2 cans great northern beans

2 32 oz containers Pacific vegetable broth + 5 cups water

Salt/pepper

30 oz can Crushed tomatoes

6 oz can Tomato paste

2 tbsp Garlic minced

1 tsp smoked paprika

1-2 tsp Oregano

1 tbsp Fennel seed

2 tbsp Olive oil

Heat olive oil in pan, add onion and celery, cook on med high heat until vegetables are softening. Add garlic, paprika, oregano, fennel, salt and pepper. Cook on med high heat, stirring, until aromatic.

Add broth, water, carrots, cabbage, crushed tomatoes and tomato paste. When vegetables are cooked through, add potatoes and beans. Simmer until potatoes are cooked. Adjust seasonings, serve hot.
