Ful madammas with kusheri
1 cup green lentils
2 cups brown rice or rice blend
6oz tomato paste
4cups tomato juice
3 cups water
1/2 tsp celery seed
1 tsp cumin seeds
salt/pepper
Add all ingredients in rice cooker and cook on brown rice setting
Juice of 3 lemons
1/3 cup tahini
3 tbsp toasted cumin seeds
3/4 cup olive oil
1/4 cup red chili paste
Salt
Combine with Immersion blender, set aside
Soak 1# dried fava beans overnight
Rinse, cover with 2-3 inches of water and 1 tsp baking soda, bring to a boil and cook covered for about1 hour. Remove cover, and simmer until beans are soft and dish has desired consistency (about another hour or two, depending on desired thickness, somewhere between a sauce and a dip). As it thickens, you will need to stir frequently. When sufficiently thick, let stand for 30 minutes. stir in lemon/olive oil/tahini mixture.
Serve with kusheri and drizzle with a flavorful extra virgin olive oil.
And when you’re done, clean your stove. This is delicious, but it’s a little messy to make.
